Parotta Egg Roll Recipe

 This Spicy Indian Parotta Egg Roll is one of my favourite street food recipes. It's a simple omelette that’s cooked in a parotta bread, topped with Tomato sauce, capsicums', onions and tomatoes.

Ingredients:

  • 1 parotta
  • 1 egg, beaten
  • 1/2 onion, thinly sliced
  • 1/2 capsicum, thinly sliced
  • 1/2 tomato, thinly sliced
  • Tomato sauce
  • Salt to taste
  • Pepper to taste
  • Oil for cooking

Instructions:

  1. Heat a pan and lightly cook the parotta on both sides until it is warm and pliable. Set aside.
  2. In the same pan, add a little oil and pour in the beaten egg. Allow the egg to cook slightly and then place the parotta on top of the egg. Press gently so that the egg sticks to the parotta.
  3. Flip the parotta and egg together and cook until the egg is fully cooked. Remove from the pan and set aside.
  4. In the same pan, add a little more oil if needed and sauté the sliced onion, capsicum, and tomato until they are slightly softened.
  5. Place the cooked parotta and egg on a clean surface. Place the sautéed vegetables on one side of the parotta.
  6. Drizzle some tomato sauce over the vegetables and season with salt and pepper.
  7. Carefully roll the parotta, enclosing the vegetables and egg inside.
  8. Serve hot and enjoy your delicious parotta egg roll!
