Flavorful Lemon Rice Recipe

Ingredients:

  • 2 cups cooked rice
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 1 teaspoon chana dal (split chickpeas)
  • 2-3 green chilies, slit
  • 1-2 dried red chilies
  • 1 sprig curry leaves
  • ¼ teaspoon turmeric powder
  • Juice of 1 large lemon
  • Salt to taste
  • 2 tablespoons roasted peanuts
  • 2 tablespoons chopped coriander leaves

Instructions:

  1. Prepare the Rice:
    • Ensure the rice is cooked and cooled to room temperature to prevent clumping. You can use leftover rice for this recipe.
  2. Make the Tempering:
    • Heat oil in a pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add urad dal and chana dal, and sauté until they turn golden brown.
    • Add green chilies, dried red chilies, and curry leaves. Sauté for a minute.
    • Add turmeric powder and mix well.
  3. Combine Rice and Tempering:
    • Add the cooked rice to the pan and mix gently to coat the rice with the tempering.
    • Add salt and mix well.
    • Turn off the heat and add the lemon juice. Mix well to distribute the lemon flavor evenly.
  4. Garnish and Serve:
    • Garnish with roasted peanuts and chopped coriander leaves.
    • Serve hot or at room temperature. Lemon Rice pairs well with papadum or a simple raita.
