Ingredients:
- 2 cups cooked rice
 - 2 tablespoons oil
 - 1 teaspoon mustard seeds
 - 1 teaspoon urad dal (split black gram)
 - 1 teaspoon chana dal (split chickpeas)
 - 2-3 green chilies, slit
 - 1-2 dried red chilies
 - 1 sprig curry leaves
 - ¼ teaspoon turmeric powder
 - Juice of 1 large lemon
 - Salt to taste
 - 2 tablespoons roasted peanuts
 - 2 tablespoons chopped coriander leaves
 
Instructions:
- Prepare the Rice:
 - Ensure the rice is cooked and cooled to room temperature to prevent clumping. You can use leftover rice for this recipe.
 - Make the Tempering:
 - Heat oil in a pan over medium heat.
 - Add mustard seeds and let them splutter.
 - Add urad dal and chana dal, and sauté until they turn golden brown.
 - Add green chilies, dried red chilies, and curry leaves. Sauté for a minute.
 - Add turmeric powder and mix well.
 - Combine Rice and Tempering:
 - Add the cooked rice to the pan and mix gently to coat the rice with the tempering.
 - Add salt and mix well.
 - Turn off the heat and add the lemon juice. Mix well to distribute the lemon flavor evenly.
 - Garnish and Serve:
 - Garnish with roasted peanuts and chopped coriander leaves.
 - Serve hot or at room temperature. Lemon Rice pairs well with papadum or a simple raita.
