Ingredients:

  • 1 kg carrots, grated
  • 1 liter full cream milk
  • 250 grams sugar
  • 100 grams ghee
  • 10-12 cardamom pods, powdered
  • 10-15 cashew nuts
  • 10-15 almonds, slivered
  • 10-15 raisins

Instructions:

  1. Prepare the Carrots:
    • Wash, peel, and grate the carrots. Set them aside.
  2. Cook the Carrots:
    • In a heavy-bottomed pan, heat the milk and bring it to a boil.
    • Add the grated carrots to the boiling milk and cook on medium flame. Stir occasionally to prevent sticking.
    • Continue cooking until the milk evaporates completely and the carrots are cooked.
  3. Add Sugar and Ghee:
    • Add the sugar to the carrot mixture and cook until the sugar dissolves and blends well with the carrots.
    • Stir in the ghee and cook for another 10-15 minutes until the halwa thickens and starts leaving the sides of the pan.
  4. Flavor with Cardamom and Nuts:
    • Add the cardamom powder and mix well.
    • In a small pan, heat a little ghee and fry the cashew nuts, almonds, and raisins until golden brown. Add these to the halwa.
  5. Serve:
    • Garnish with additional nuts if desired.
    • Serve hot or cold, as per your preference.
